Winter Veggies

A few months ago I tried Kimchi for the first time. I was hooked! I began trying other fermented foods like kefir, Kombucha, sauerkraut, and fermented veggies like beets and carrots. So after much research I decided to try making my own fermented veggies. It was really simple to do and it has been about three weeks now. They take four to six weeks total so I’m getting close! I’ve sampled them several times now and I can tell they are going to be delicious! I love that I can create nutritious foods in the winter and these veggies will contribute nicely to my mostly Paleo diet.
